I have been looking at a lot of recipes but they don't specify which brand they use. Matcha tea is not sold in the local stores here. I can only think of ebay to buy it off. If anyone has made these, please let me know which brand you bought...

There are 2 types of matcha- koicha and usucha.

The pure dried leaves (tencha) are then stone ground into a super fine powder that is the consistency of talc. Matcha is uniquely Japanese.

Would you eat a sandwich cookie that consists of two green tea shortbread cookies with chocolate filling? How would you describe the taste? How do you think it would appeal to consumers?

Not so much-- I'm not seeing what the point of the green tea shortbread is. I mean, it's not gonna be healthy, it's a freaking cookie. And matcha powder, which goes very well with sweets, would probably get overpowered by everything else.
