I made one once (I also made a matcha poundcake) and I just added either 3 or 4 tablespoons of the powdered tea to my standard cheesecake recipe. It turned out very well.

If it is over a few years old, I wouldn't take the chance. It's in a dry powder form so it's probably still good, and it will be in a cake so it will be under heat. It's probably good, but do you really want to risk it.
